Christmas-Eve Chicken Gnocchi

It may not be a little Christmas Fettuccini like in The Holiday, but it is pretty darn good to get you into the holiday sprit. This creamy, delicious dish combines chicken, tomatoes, spinach and cream, with pan-friend gnocchi (I had there was no such thing!) that compliments the creaminess of the sauce with the crunchy, yet doughy texture of the gnocchi.


I'll admit, I accidentally ordered skillet gnocchi while using Instacart for the first time (yes, darlings, we are quarantined, but that shall not stop the yummy creations!). I had no idea there was a difference in gnocchi. A little research along with my good friend, Mr. Google, and I'll be damned there is a difference in the style of gnocchi. (Cue NBC's "The More You Know" star!).


This is a quick, easy dish to make, especially if you have some left over chicken and veggies laying around. Let's Cook!

 
The Tools
  • Cutting Board

  • Wooden Spoon

  • Spatula

  • Knife

  • Bowls

  • Cast Iron Skillet (for gnocchi)

  • Large Skillet (for the veggies and chicken)

 
The Ingredients

1lb. Chicken Breasts, Cubed (or left over chicken)

12oz Bag Skillet Gnocchi (x2)

16oz Grape Tomatoes, Halved

8oz Bagged Spinach

1Tbsp. Minced Garlic

6Tbsp, Butter

Extra Virgin Olive Oil

1 Pint Heavy Cream

1 Cup Grated Parmesan Cheese

Kosher Salt

Pepper

 
Let's Cook
  1. In large skillet over high heat, pour enough oil to coat the bottom of the pan. Bring to heat.

  2. Cube chicken and add to pan. Add a pinch of salt & pepper. Stir and cook. Set aside in bowl when cooked.

  3. In same pan, add a little more oil to the pan and add in your tomatoes. Sprinkle with salt and stir until the tomatoes begin to break down and release their liquid.

  4. Add in your spinach and steam down. The liquid of the tomatoes should help to wilt the spinach. If not, add just a little water to the pan to steam. Stir together well.

  5. Once spinach has wilted down, add back in the chicken and stir together.

  6. Once chicken and veggies are mixed, pour in your pint of cream and bring to a boil. Add in your garlic and stir.

  7. Once brought to boil, remove from heat and add in your parmesan cheese, and stir. Mixture will begin to thicken. Salt & Pepper to taste.

  8. As the sauce is thickening, take your cast iron skillet, and place on high heat. Add in butter and melt.

  9. Once butter has melted, add in your gnocchi and pan fry, flipping and stirring every minute or so. The gnocchi will begin to brown and create a crust! (Be Advised: Gnocchi will burn quickly if left too long! Just keep an eye on it, and turn it every minute or so.).

  10. Pan fry gnocchi for about 5 minutes. Once browned, remove from heat and place in separate bowl.

  11. Plate Gnocchi in individual bowls and pour chicken and cream mixture over. Top with a little extra Parmesan Cheese and Enjoy!
