Easy Shepards Pie

I love this recipe! It is simple, tasty and just a feel-good meal for those cold winter nights. This is a great meal to make if you have left over mashed potatoes (I know, who has leftover mashed potatoes?), or those frozen mixed veggies in your freezer that you've been putting off using. This is so flavorful, so comforting, you'll be going back for seconds and thirds!

Let's Cook!

 
The Tools
  • Cutting Board

  • Knife

  • Baking Dish

  • Cutting Board

  • Large Mixing Bowl

  • Large Frying Pan

 
The Ingredients
  • 2lbs Ground Beef

  • Sweet Onion

  • 1 Bag Frozen Mixed Vegetables

  • 1 Container Mushrooms

  • 3 Stalks Celery

  • 1 Box (20oz) Instant Potatoes (or leftover Mashed Potatoes)

  • 1 Jar Beef Gravy

  • 1 Can Beef Broth

  • 3 Tablespoons Flour

  • Olive Oil

  • Butter

  • Salt

  • Pepper

 
Let's Cook
  1. Preheat oven to 350degrees

  2. Make your box of potatoes according to box- you'll want enough potatoes to cover top of meat and vegetable mixture. Once made, remove from heat to cool.

  3. Dice your onions and celery- place in separate bowls.

  4. In your pan, take 1/2 stick butter and melt. Add in your mushrooms and stir, coating mushrooms in melted butter. Add a pinch of salt and pepper. Cook about 5 minutes.

  5. Add in celery, and onion and sweat down.

  6. Add in bag of mixed veggies and cook. Cook for about 5 minutes. Add mixture to large mixing bowl.

  7. In same pan, coat bottom with olive oil and bring to heat. Add in your ground beef and brown. Drain oil and return to pan. Add in veggie mixture and coat with flour. Add in can of beef broth and mix, heating until gravy begins to thicken. Add entire mixture to bowl, and add in jar of gravy and mix together.

  8. In 9x13 baking dish (deeper the better), add in beef and vegetable mixture. Spread potatoes over the top. Taking a fork, create lines across length of potatoes. Place in oven and bake for 30 minutes. After 30 minutes, turn broiler on high and broil 3-4 minutes to fully brown the potatoes.

  9. Remove from heat and let cool. Serve and enjoy!
