Lasagna Soup

If you know me you know I LOVE to make lasagna. I will "whip up" a Lasagna whenever anyone asks. I think it is one of my favorite meals to make because, let's face it, who honest love a good lasagna? The mix of flavors, and textures just makes you feel good! But lasagna isn't for the faint of heart- it does take some time to make. If you don't have the time, but have the makings, you can make it into soup form in a fraction of the time! Let's Cook!
The Tools
Stock Pot

The Ingredients
1lb Ground Beef
1lb Bulk Italian Sausage (Sweet or Hot- Your Choice)
1 Box Lasagna Noodles
8 Cups Beef Broth
1 Large Can Tomato Paste
1 Large Can Diced Tomatoes
1 Packages Sliced Mushrooms
1 Package Baby Spinach-Chopped
1 Bunch Fresh Cilantro- Chopped
1 Bunch Fresh Parsley- Chopped
1 Bunch Fresh Basil- Chopped
1 Yellow Onion- Diced
6 Cloves Garlic- Diced
1 Cup Shredded Mozzarella
1 Cup Shredded Parmesean
15oz Cup of Ricotta Cheese
1 Stick Butter
1 Tablespoon Olive Oil
Salt
Pepper

Let's Cook
In a frying pan, add half stick of butter and melt over high heat. Add mushrooms and begin to cook down (about 5 minutes). Add a large pinch of salt and pepper.
When mushrooms have shrunk in size, add in onion and garlic. Stir together and cook until onions begin to become translucent.
Add in your fresh herbs. Mix together and add another large pinch of salt and pepper. Once well combined, add vegetable mixture to stock pot.
In same pan, add olive oil and heat. Add in your ground beef and sausage and brown. Add large pinch of salt and pepper.
Once browned, drain excessive fat and add meat mixture to stock pot. Mix together meat and vegetable mixtures together.
Add in you can of tomatoes (juice included) and the tomato paste.
Add in your beef broth. Bring all to boil.
While you're waiting on your stock pot to boil, break up your lasagna noodles into pieces.
In a separate pot, bring water to a boil and add in your lasagna noodle pieces and cook until al dente. (this will prevent the noodles from soaking up the soup broth). Once cooked, reserve two ladles full of starch water and add to soup pot. Drain remaining water and add noodles to soup mixture.
Once all combined, reduce soup to simmer and cover.
While soup is simmering, make the cheese topping by combining the ricotta, parmesan and mozzarella together in a bowl. Set aside.
Once cooked, plate your soup in a bowl and scoop one tablespoon of cheese mixture on top. Enjoy!
Soup & Sandwich Night?
If you want to make it a Soup & Sandwich Night, we suggest a Tomato, Mozzarella & Basil on Ciabatta with Balsamic Glaze.
You Will Need:
Ciabatta Bread
Sliced Tomaotes
Sliced Mozzarella
Fresh Basil
Balsamic Glaze

To Make:
Take bread and drizzle balsamic glaze on both sides. Place two slices of tomato on one slice of bread. Add two slices of mozzarella cheese on top of tomatoes. Place two piece of fresh basil on top of cheese. Place other piece of bread on top, and cut in half. Enjoy!
