Every time I watch the movie Ratatouille, I want to make Ratatouille; and while I do not have a small, adorable rat atop my head helping me to make it, I hope this helps you create this visually pleasing and delicious vegetable dish that really isn't that hard to make. With the help of a couple of tools, a little patience, and a little practice, this can be made in little time! As Gusteau says "anyone can cook," I, too, agree. Mandolin Slicer
Circular Baking Dish (A Glass Pie Dish Does Nicely)
Frying Pan
Parchment Paper (Optional)
The Ingredients
1 Medium Eggplant
1 Large Squash (Yellow or Green)
5-6 Grape Tomatoes (or smaller vine tomatoes)
14oz Can Diced Tomatoes
3 Minced Cloves of Garlic
Olive Oil
Salt
Pepper
Let's Cook!
Preheat Oven to 425 degrees.
Using the thin slice setting on the mandolin, slice each of vegetables into slices. Once sliced, cut in half and set aside.
Heat frying pan over high heat and coat with olive oil. Add canned tomatoes, chopped garlic and heat together until tomatoes heat through and start to create a sauce-like consistency. Once heated, place in circular baking dish and spread evenly.
Alternate the vegetables in stacks: eggplant, squash, tomato, repeat. After a couple of laters, carefully add vegetables to the outer paremeter of the dish until you have gone around the entire dish. Depending on the dish, you can then do an inter circle, or just fill in the center with a couple of rows.
Once completed, sprinkle a pinch or two fo salt and pepper over veggies and cover with parchment paper (cut in a circle to properly cover the veggies- optional).
Bake in oven for about 30 minutes (45 minutes if uncovered) until the vegitables become soft, and browned.
Once cooked, take out of oven and let cool. Serve as a side or main dish. Enjoy!
